Be a Cooking Genius, By following this ONE rule!

Just three months married in Columbus, Ohio, we decided to take a leap of faith. We were young, adventurous, and extremely naive! We packed our barely used belongings in a U-haul truck and moved eight hours south. “North Carolina or Bust!” (Caution: Do not try this at home!)

We went there on invitation to lead music at a new church. And as you may know, where there’s church-folk, there’s food! And particularly in the South! So that meant “carry-ins” happened! (That’s southern for potluck.) It also meant it was time to take our shiny new 9 X 13 casserole pan, with warming carrying case, out of the box, baby!

At these frequent feasts, when I ate something fabulous (which was every time), I tracked down the cook and begged for the recipe. (By the way, that’s actually how I learned to cook good food!) Well one fateful day, a sweet lady gave me more then I bargained for. She shared with me some of the best chef advice I’ve ever received! Wanna know what she said?!

Here it is. Got a pen?

“Cook ONCE, Eat TWICE!”


So, you can probably guess what this means, right? While you’re browning one pound of beef, you might as well cook two pounds! (Or four, like I do now days.) While you’re whipping up a batch of cookies, muffins, or pie crust, make a double batch! While soaking a pot of beans for chili, dump in enough for twice the recipe. Why the heck not?! You’re already there with ingredients out! I know, it sounds so simple! But you’d be surprised how many busy ladies I’ve met who don’t do this, and remark, “Oh wow, that’s a good idea! I should try that!”

For me, as long as it’s not a new recipe I’m trying out, and I’ve got all ingredients on hand to double it, then this Cook Once, Eat Twice rule is totally non-negotiable! Why? Because it saves a TON of time! Not to mention money! (Often buying in bulk saves big bucks, as you know!) Trust me on this. (Can you hear the urgency in my voice?) Ok, I double dog dare ya to try it for one month. If you don’t wanna go back and kiss your conscientious self for thinking ahead, I’ll grant you a full refund! ;-)

Cook Once, Eat Twice is pure brilliance! Especially for us busy mamas! On those crazy nights when you don’t have time or energy to think of a supper plan: Boom! You’ve got a back up portion of soup in the freezer for just this occasion! And Cook Once, Eat Twice is a huge relief for those who don't actually enjoy cooking! Yep! I see those hankies wavin’! Give it a whirl and you’ll thank yourself profusely! Promise!

Clearly, you’ve got nothing to loose, and potentially a ton of time to gain! It’s literally saved me hundreds of hours in the kitchen in my 21 year cooking career! I have a feeling that, Cook Once, Eat Twice, will soon be a rule adopted into your kitchen as well. Or better yet, as we’ve added in our household for the past several years, "Cook once, eat twice! Or three or four times!" As many extra meals prepped in one work session the better! It’s genius I tell you! And now you are as well!
